Puede implementar el delegado de UIWebView e interceptar cualquier carga de página intentada. Al configurar una url personalizada, puede pasar un mensaje al objetivo C, que puede iniciar la cámara. Para enviar datos a la web, puede iniciar una nueva carga (como hago en mi ejemplo), o pasar algo de javascript utilizando otro método en UIWebView.
